We are humbled and elated to offer, for the first time in our 40 years of sugaring, a limited bottling of ECLIPSE MAPLE, made from sap that ran on the afternoon of April 8, 2024.  The Eclipse Maple is graded Dark and Robust, but veering on the verge of Very Dark in flavor -- quite earthy and strong!

While it is true that the sap runs only at the perfect convergence of warm days and cold nights, it is perhaps only once in a lifetime that those conditions also include a total solar eclipse, blanketing your sugarbush in that brief, magic darkness known as the Path of Totality.  Throughout our decades as sugarmakers, we continue to marvel at the grand movement of the universe and the mystical moments that remind us of our place in it.
